Be greeted with a glass of Tasmanian Bubbles and a tasty crispy, amuse bouche of Puri Pani Puff filled with Tuna, Smokey Garlic Mayo Emulsion, Yuzu and Micro Herbs

Begin your Degustation Experience with a hearty bowl of famous creamy Cray Fish Bisque with delicate slices of Rabbit Meat. Served with Sourdough Damper Croutons

Then Tender quail, flash-fried for a delicate crunch, dressed in fragrant aromatic five-spice. Served over sautéed seasonal Asian greens and silky rice noodles with a velvety miso reduction

Then Tasmanian Goat Chef Trishy's way - Slow-Roasted 'Euro-Asian' style Goat Shoulder slow cooked till falling apart tender and served on a bed of parsnip and confit potato cubes, finished with coriander and crispy lemongrass strips and a fennel orange salsa

Round it all out with the star of the show, Blue Eyed Trevalla. Pan-Seared Blue Eye Trevalla with Braised Brown Lentils & Sauce Vierge finished with a seared Scallop

Sweet treat is quintessentially Tasmanian, slices of Hamlet Downs; Aphrodite's Pudding featuring Hamlet Downs quince, rosewater, pistachios and figs.
